Natural paste (cacao mass) made from ground cacao beans (theobroma cacao), also known as ceremonial cacao, is 100% real, unprocessed, fat-free cacao.
Baya cacao has an exceptionally delicate yet rich flavour, dominated by milk chocolate. It also has hints of black berries and other forest fruits, with hazelnuts and cardamom looming in the background. The cacao is neither tart nor sour, but slightly dry.
This cacao is grown on a sustainable, permaculture and organic plantation (eye-tested), where only Criollo varieties are planted, and if only it had EU certification it could successfully be called organic or BIO cacao.
The plantation is located in Guatemala in the picturesque and evergreen Polochic Valley, through which the river of the same name flows. The plantation grows the noble and rare Criollo cacao variety along with cardamom in the spirit of permaculture.
Ceremonial cacao contains the energy-boosting theobromine and is therefore a healthy substitute for coffee. The effect of theobromine is much more subtle and milder than that of caffeine. It also contains anandamide, which has a calming and opening effect on the mind and heart. Therefore, ceremonial cacao improves mood and promotes creativity. Thanks to its high fat content, cacao nourishes the body well, and the minerals (magnesium, potassium) and antioxidants it contains keep our body and mind healthy and youthful.

Mix about 10-20 grams of crushed cacao with water, vegetable or animal milk (200 ml) and spices such as chilli, vanilla, cinnamon or cardamom. If desired, sweeten with honey or other healthy sugar. The spices and honey should be added at the end of the process.

The question of using vegetable or animal milk is individual and does not significantly affect the properties of the cacao drink. Nevertheless, we recommend using water or vegetable milk.
