Cocoa from Sao Tome is a true treasure of the island tropics. The plantations stretch across the lush, green areas of this picturesque island, where the climatic conditions are ideally suited to cocoa cultivation. Three exceptional varieties of cocoa grow on these fertile soils: the Amelonado, Trinitario and Catongo.
Amelonado is a variety with a deep, classic chocolate flavour and is the base for many chocolates around the world. Trinitario, which is a cross between Criollo and Forastero, adds a richness of flavour and complexity to the cacao from Sao Tome. The last variety, Catongo, introduces slightly lighter notes in the chocolate, perfectly balancing the whole bouquet of flavours.
