Ceremonial cacao (full-fat cacao paste) comes from the picturesque Caribbean province of Paria in Venezuela. It is produced in the traditional way on the farm from cacao beans of the Amelonado variety, whose fruit is yellow in colour and shaped like a melon.
The product is characterized by a mild, bittersweet dark chocolate flavour and very low acidity.

Amelonado cacao is one of the varieties of cacao grown in Venezuela, especially in the province of Paria, where the climate and soil conditions favour its development. Amelonado cacao trees grow at elevations between 100 and 400 meters above sea level and reach heights of 3 to 10 meters.
Amelonado cacao fruits have the shape of elongated melon-like shapes, about 20 cm long and between 10-15 cm in diameter. They are yellow-green or reddish in colour, and its inside contains around 20-50 cacao seeds, called beans. Amelonado cacao beans are smaller than other cacao varieties such as Criollo or Forastero.
Amelonado cacao has an intense flavour with characteristic notes of chocolate, caramel and nuts, as well as a delicate fruity aroma. It is less bitter than Forastero cacao and has a more pronounced flavour than Criollo cacao.
Venezuela is known for producing high-quality Amelonado cacao, which is often hand-picked and sorted. It is then ground into cacao paste, which is shipped to chocolate makers around the world.
