Natural paste (cocoa mass) made from ground cocoa beans (theobroma cacao), also known as ceremonial cocoa, is 100% real, unprocessed, fat-free cocoa.
Almendra Blanca (white almond) cacao has a delicious and deep milk chocolate flavour. Notes of vanilla can be detected in the background. It is not sour but distinctly dry, floral and refreshing.
This cacao is grown on a sustainable, small-scale and organic plantation in Mexico in the state of Tabasco. The fermentation process is greatly aided by the bees that feed on the cacao beans, which proves the purity of this cacao from any pesticides, so if only it had EU certification it could successfully be called organic or BIO cacao.
It is made from Almendra Blanca beans.
Ceremonial cocoa contains the energy-boosting theobromine and is therefore a healthy substitute for coffee. The effect of theobromine is much more subtle and milder than that of caffeine. It also contains anandamide, which has a calming and opening effect on the mind and heart. Therefore, ceremonial cocoa improves mood and promotes creativity. Thanks to its high fat content, cocoa nourishes the body well, and the minerals (magnesium, potassium) and antioxidants it contains keep our body and mind healthy and youthful.
It is not without reason that the Maya called cocoa the food of the gods.

We mix cacao with hot water ( about 90 centigrades) or milk with blender for about one minute. This is the fastest method. This cacao drink is really smoothy and it tastes a little bit like milk chocolate.
Another idea is to melt cacao with water in the pot being very careful not to boil it up ( up to 80 centigrades) . Too high temperature changes the quality and taste of cacao as it can destroy some minerals and natural chemicals it contains. This way of preparing cacao makes it more dense and more intense. By the way this is the method it is prepared for the ceremony.
