Sourced from near the Nicaraguan border, Upala cocoa has a sweet and delicate profile reminiscent of toffee or milk caramel, and a creamy flavor with nuances of coffee and walnuts, giving this chocolate bar depth and complexity.
Since cocoa has little bitterness and acidity, leading to a sense of greater sweetness in the chocolate, we decided to increase the cocoa content, making it exceptionally dark, with 92% cocoa providing flavor notes such as peanuts, almonds or hazelnuts, with subtle hints of mustard.
