As the name suggests, this cacao is in the form of a fine powder, which is produced after grinding so-called “cacao kejk”. What is this “cacao kejk?”. This polonised term (from “cake”) is used to describe the round cake-shaped moulding that is formed after the original cacao mass has been pressed and skimmed. Because of this latter process, cocoa powder contains less fat than cacao paste (i.e. between 10% and 24%).
For what is cocoa powder used?
Cocoa powder has a wide range of applications in the kitchen: it can be used to make an aromatic drink, but also for baking – after all, the combination of cocoa powder and cacao butter is perfect for making homemade chocolates! Contrary to popular belief, cocoa powder is a 100% natural product.
Natural or alkalized cacao (Dutch Cocoa)
There are two main types of cocoa powder. Firstly, natural cacao, which is characterised by its light brown colour – it is an additive-free product with an intense chocolate flavour. The second type is alkalized cacao (also called Dutch Cocoa), which takes on a dark brown or even black colour. To obtain this second type, the cacao is treated with a strong alkali, such as potassium hydroxide, to produce a darker colour and milder flavour. It is alkalised cacao that is most used in the confectionery industry.
