We often associate cocoa with the sweetness of chocolate, but the full bouquet of cocoa flavour contains various shades of bitterness, fruity and nutty aromas – it can also be more or less dry! When it comes to the use of cocoa, we can use it not only in the culinary world – it also works great as a natural cosmetic!

100% paste made from ground cocoa beans, i.e. ceremonial cocoa

Cocoa paste, also known as ceremonial cocoa, comes in the form of blocks, crumbly pieces or tablets with the consistency of hard chocolate. In fact, ceremonial cocoa is the purest, 100% chocolate without any artificial additives! Cocoa paste has a natural bitterness, but different varieties vary in taste – some even seem sweet! Delve into the world of cocoa and you will find that its bouquet of aromas is a veritable Amazonian jungle of sensations!

Full-fat cocoa – how to use it?

Ceremonial cocoa (unrefined cocoa paste, cocoa mass) is suitable for making a thick, aromatic drink and chocolate, but it can also be used as a natural face mask and for massage! Non-defatted cocoa usually contains about 50% cocoa butter.

What is cocoa powder?

As the name suggests, this cocoa is in the form of a fine powder, which is produced after grinding the so-called “kejk cocoa.” What is this “kakao kejk?”. This polonized term (from "cake") is used to describe the round cake-shaped molding that is formed after the original cocoa mass is pressed and skimmed. Because of the latter process, cocoa powder contains less fat than cocoa paste (i.e. 10% to 24%).

Uses of cocoa powder

Cocoa powder has many culinary uses: it can be used to make a drink or cake, and when combined with cocoa butter it is also suitable for making homemade chocolates. Contrary to popular belief, it is 100% natural and noble.

Alkalized and natural cocoa

There are two types of cocoa powder: natural, light brown-red in colour, and alkalised (also known as Dutch Cacao), which is dark brown or even black in colour. The former is defatted cocoa without any additives. Alkalised cocoa, on the other hand, is treated with a strong alkali during the production process to obtain a darker colour and a milder flavour.

Czym jest masło kakaowe?

Cocoa butter, also known as cocoa fat, is both a semi-finished product for chocolate production and... a natural cosmetic! The name would suggest that this product has the consistency of a soft spread, but it is worth knowing that at room temperature, cocoa butter is slightly harder than its regular counterpart. In its natural form, it also has an intense chocolate aroma, but a deodorised, odourless version is also available.

Uses of cocoa butter

Cocoa butter is very stable and, of course, is also ideal for all kinds of culinary uses, especially for making white chocolate and other confectionery products. But did you know that cocoa butter is also a true friend to your skin? Whether in the form of a cream or applied directly, the butter brightens the skin, regenerates it, nourishes it and removes discolouration. If you like to smell like chocolate, use natural butter; if you prefer conventional perfumes, deodorised butter will be just right for you.

Raw cocoa beans

The cocoa fruit contains large beans (1-3 cm long) which, once removed, undergo a process of fermentation and drying lasting several days. They are then ground to produce cocoa paste, which will one day become aromatic chocolate!

How to consume cocoa beans

Raw beans are not suitable for direct consumption, but they only need to be roasted to become a delicious snack or – after grinding – a semi-finished product for further culinary endeavours!

Cocoa nibs

Nibs, also known as cocoa nibs, are shelled and crushed cocoa beans. They come in two forms: raw and roasted. The latter is suitable for direct consumption, while raw nibs must first be roasted in a dry pan.

What do we use cocoa nibs for?

Nibs can be a healthy snack that can successfully replace popcorn and sweets during a film screening. They are also used to produce cocoa paste and, as a result, chocolate. Cocoa nibs can also be used to flavour various drinks, such as chocolate beer!

Bio/organic products

Our range also includes organic products made from cocoa beans sourced from certified organic plantations. Organic cocoa undergoes testing before being loaded into containers and at its destination port in Europe.

What is a bio certificate?

An organic certificate, also known as an ecological or organic certificate, is an official document confirming that a given product has been manufactured in accordance with specific ecological standards. Products bearing this certificate must meet a number of criteria relating to production, processing and distribution, which are designed to minimise environmental impact and promote sustainable management.

Fair Trade certified cocoa

Many of our cocoa products are Fair Trade certified. Certified plantations are constantly monitored for working conditions and farmer wages.

What is Fair Trade certification?

Fair Trade certification, also known as Fair Trade certification, is official confirmation that a product comes from a production process that adheres to Fair Trade principles. Products bearing this certification come from companies that provide fair working conditions and fair wages for producers, often in developing countries.
Fair Trade certification organizations adhere to certain standards, which include minimum prices provided to producers, ensuring safe working conditions, promoting sustainable development of local communities and caring for the environment.

Rainforest-certified cocoa

The cacao comes from the Amazon rainforest, although nowadays it is not only grown in the Amazon jungle, but throughout the subtropical zone. Some of the products we offer are certified to certify that cacao plantations have no negative impact on the environment and that the crops are grown in an environmentally sustainable manner.

What is Rainforest certification?

Rainforest Alliance certification is official confirmation that a product or company meets certain standards for sustainable agriculture, environmental protection and the well-being of local communities.

Products bearing this certification are sourced from farms, plantations or companies that adhere to guidelines for rainforest conservation, minimizing environmental impact, protecting biodiversity and improving working and living conditions for local communities.
