Mexico Pataxte Cacao Ceremonial
A very rare cacao from Oaxaca, Mexico of the Theobroma Bicolor species. It also appears under the names: Pataxte, Macambo or Jaguar Tree. It was and is ritually used by the Mayans in the form of a drink called Tejate.
Unlike its best-known cousin, Theobroma Cacao, it is more difficult to grow and harvest, as Pataxte trees grow up to 20 meters tall and bear fruit only once a year in October.
Pataxte Flavour
Its flavour resembles milky coffee with distinct notes of field herbs.
How to prepare Pataxte?
Simply mix about 20-30 grams of Pataxte paste with 250 mL of hot water (60-70 degrees Celcius). The resulting drink will be yellowish-vanilla coloured with delicate shades of cacao.
