Dark chocolate 72% – Negro Peru Marañón

Negro Peru Marañón Dark chocolate 72%

0 customer reviews

Peru Marañón is one of the rarest cacao in the world, not only for its exceptional quality but also for its legendary history. Until the early 20th century, Ecuador had a variety of unique cacao known as Puro Nacional. Considered extinct due to disease, about 100 years have passed. In 2009, Dan Pearson and Brian Horsely discovered rare cacao trees in the Marañón Valley in Peru. After DNA analysis, Dr. Lyndel Meinhardt of the USDA confirmed that their beans were identical to those of the lost ancestor of cacao, Puro Nacional.

This rare fruit grows at altitudes above 1,000 meters, and the 40% white grains give it elegance and complexity. It starts with a highly aromatic bouquet of orange blossoms, sandalwood, and muscat grapes, filling the palate with notes of wine liqueur and Earl Grey tea, revealing its creamy consistency with delicate accents in a long and intense finish. This is an extremely fascinating and even stunning chocolate.

Marañón cacao from Peru is a unique product from the Marañón Valley, located in the Amazonas region in the northern part of the country. This region is known for its excellent climate and soil conditions, which favor the cultivation of high-quality cocoa.

Cocoa from Marañón is distinguished by its unique flavor profile, which is due to both the unique varieties of cocoa grown in the region and the specific growing conditions. Varieties such as Criollo and Nacional are known for their complex flavor notes, which often include fruity (citrus, berries), floral and nutty accents, making Marañón cacao particularly prized in the production of premium chocolates.
