Cocoa powder

Cocoa powder is a popular and convenient product we have known for years. In our assortment you will find both drinking cocoa and more sophisticated types suitable for confectionery applications.

As the name suggests, this cocoa is in the form of a fine powder, which is produced after grinding the so-called “kejk cocoa.” What is this “cocoa kejk?”. This polonized term (from "cake") is used to describe the round-shaped molding that is formed after the original cocoa mass is pressed and skimmed. Because of the latter process, cocoa powder contains less fat than cocoa paste (i.e., 10% to 24%).

What is cocoa powder used for?

Cocoa powder is widely used in the kitchen: it can be used to make an aromatic drink, but also for baking - after all, the combination of cocoa powder with cocoa butter is perfect for making homemade chocolates! Contrary to popular belief, cocoa powder is a 100% natural product.

Natural or alkalized cocoa (Dutch Cocoa)

There are two main types of cocoa powder. First, natural cocoa, which is characterized by a light brown color - it is an additive-free product with an intense chocolate flavor. The second type is alkalized cocoa (also called Dutch Cocoa), which takes on a dark brown or even black color. To obtain this second type, cocoa is treated with a strong alkali, such as potassium hydroxide, to produce a darker color and milder flavor. It is alkalized cocoa that is most often used in the confectionery industry.
