Upala cocoa, originating from the border areas with Nicaragua, is characterized by a sweet and delicate profile reminiscent of toffee or milk caramel, as well as a creamy flavour with hints of coffee and walnuts, giving this chocolate bar depth and complexity.
As the cocoa has low bitterness and acidity, leading to a greater perception of sweetness in the chocolate, we decided to increase the cocoa content, making it exceptionally dark, with 92% cocoa, which provides flavour notes such as peanuts, almonds, or hazelnuts, with delicate hints of mustard.
