Indonesia Sumba Cacao Ceremonial

Ceremonial cocoa (full-fat cocoa paste, cocoa pulp) of the Criollo (DR1) and Trinitario (ICS13 / 60, TSH858) varieties, comes from the western part of the Indonesian island of Sumba.

This cocoa has an exceptionally complex spicy-sweet flavor with notes of flowers and dessert chocolate. Strong notes of Mexican chili hit at the beginning, in the middle the flavor becomes light and floral to develop into deep and strongly chocolatey. Finally, notes of jalapeño gently tinker.

This cacao was made from high-quality, selected premium cacao beans.

The cocoa comes from a family plantation established in 1990. The farm currently employs about 60 full-time workers who live on the plantation and have access to a free school for their children and their own land for growing food. During the harvest season, the farm employs an additional 150 workers from surrounding villages.
