Sur del Lago ceremonial cacao (full-fat cacao paste, cacao pulp) is a high-quality cocoa from the western Venezuelan region of Sur del Lago, which is famous for producing excellent cacao of the Criollo species. Sur del Lago cacao has an intense dark chocolate flavour and aroma with hints of nuts and vanilla, as well as mild acidity. Because the cacao paste is very finely ground, conched and gently tempered, the texture of this product is smooth and silky. It is a rare and valued species, due to its quality and unique origin.
Yoloxóchitl cacao is made from a blend of Guayaquil (30%) and Criollo (70%) beans.

The cacao that grows in Venezuela’s Sur del Lago province is mainly the Criollo species, considered one of the best cacao in the world.
Criollo cacao trees grow between 300 and 1,300 meters above sea level and reach heights of 4 to 8 meters. Its fruit has a characteristic elongated shape, and inside it contains 20 to 40 Cacao seeds.
A delicate flavour with floral, fruity, and nutty notes characterizes criollo cacao. It is less bitter than other types of cacao, such as Forastero, but has a more refined and subtle flavour that is appreciated by chocolate connoisseurs.
The cacao from Venezuela’s Sur del Lago province is hand-harvested and sorted, ensuring the beans are of exceptional quality. These beans are then fermented and dried and ground to produce cocoa pulp, which can be processed into various chocolate products.
Cacao from Venezuela’s Sur del Lago province is prized for its quality and unique flavour. The region is known for producing extremely high quality Criollo cacao, which is used by some of the world’s top chocolate makers. Due to the low productivity of the trees and the high cost of production, cacao from Venezuela’s Sur del Lago province is very expensive and rarely seen in mass production.
