Ceremonial cocoa from the Sur del Lago region (full-fat cocoa paste, cocoa mass) of the Trinitario variety comes from Venezuela – from the famous area below Lake Maracaibo. This unique cocoa is characterised by a delicate, fruity flavour with notes of wood and nuts, and its finish is distinguished by low acidity and astringency.

Sur del Lago is roasted at a low temperature (115°C for 50 minutes), which fully reveals its natural sensory characteristics while preserving its delicate aromas, creating a smooth, well-balanced flavour profile.

The cocoa grown in Venezuela’s Sur del Lago province is mainly of the Criollo variety, which is considered one of the best cocoa in the world.

Criollo cocoa trees grow at altitudes of 300 to 1,300 metres above sea level and reach heights of 4 to 8 metres. Their fruits have a characteristic elongated shape and contain 20 to 40 cocoa beans inside.

Criollo cocoa has a delicate flavour with floral, fruity and nutty notes. It is less bitter than other cocoa varieties, such as Forastero, but has a more refined and subtle flavour that is appreciated by chocolate connoisseurs.

Cocoa from the Sur del Lago province in Venezuela is hand-picked and sorted, ensuring the exceptional quality of the beans. The beans are then fermented, dried and ground to produce cocoa paste, which can be processed into various chocolate products.
