The name ‘cacao butter‘ suggests that the product has the consistency of ordinary butter, but this is not quite true: indeed, at room temperature cacao butter is slightly harder. It is also intensely yellow in colour, sometimes broken by a natural white coating made up of precipitated fat particles.

Natural or deodorised cacao butter

Cacao butter comes in two types. The first is natural butter, which is characterised by a deep, chocolatey aroma. The second is deodorised butter, which is devoid of the cacao aroma. Both types have similar properties but differ in their uses.
