Theobroma bicolor (jaguar tree cacao) is one of the rarest species of the Theobroma genus, right after the culturally significant Theobroma cacao. According to some sources, there are only about 1,000 such trees left in the world, hidden deep in the wild tropical jungle. Since prehistoric times, jaguar cacao has been used both as food and for ritual purposes, so the challenge of working with it has always fascinated me. I was able to create a very limited supply chain for these rarities and give them a slightly smoky and spicy character through a proprietary recipe. Taking it a step further, I dipped the beans in chocolate made from heirloom white cacao. Try it before it's gone forever.
