Ceremonial Cacao – Mexico Almendra Blanca – 100% Cacao Paste

Mexico Almendra Blanca Cacao Ceremonial

0 customer reviews

The ceremonial cacao (full-fat cacao paste, cacao pulp) called Almendra Blanca (white almond) is characterised by a delicious and deep milk chocolate flavour, which is complemented by notes of vanilla. It is not sour, but slightly dry, floral, and refreshing.

This cacao is grown on a sustainable, small-scale, and organic plantation in Mexico’s Tabasco state. The fermentation process is greatly aided by bees, which feed on the cacao pulp, indicating the purity of the beans. If tt had EU certification, it could be successfully called organic or BIO.

The cacao was produced from the beans of the local Almendra Blanca cacao variety.

Almendra Blanca cacao, also known as ‘white almonds’, is a species of cacao that grows in the Mexican state of Tabasco, in the Sierra de Tabasco mountain region. The name refers to the colour of the white cacao seeds, rare among other cacao species.

Almendra Blanca has an intense flavour with notes of almonds and other nuts, as well as floral and fruity ones. It is a unique species of cacao that is prized for its richness of flavour, as well as its resistance to disease and pests.

Almendra Blanca cacao is traditionally grown by Tabasco Indian communities organically and sustainably, without using artificial fertilisers and pesticides. The plant is usually grown in the shade of other trees, which provides it with natural growing conditions.

Almendra Blanca cacao is used in the production of various cacao products, including a traditional Mexican drink called ‘champurrado’, which is a type of hot cacao with the addition of corn flour, cinnamon and other spices.

In summary, Almendra Blanca cacao from the Mexican state of Tabasco is a unique cacao species that is prized for its richness of flavour, as well as for the way it is organically and sustainably grown. This cacao is popular in the production of traditional Mexican desserts and cacao drinks.
